VEGAN GF PESTO PASTA

I HAVE BEEN MAKING THIS RECIPE FOR YEARS AND IT'S SUPER QUICK, SIMPLE AND DELICIOUS!!!

INGREDIENTS:

100G CASHEWS

LIME JUICE

PINCH OF SALT

X2 TABLE SPOONS HUMMUS

X1 TABLE SPOON OF OILIVE OIL

50G SPINACH

X1 TEASPOON VEGAN CHICKEN STOCK

15G BASIL

X1 TABLE SPOON OF YEAST FLAKES


GF PASTA (I USED THE SAN REMO'S PENNE BRAND)




METHOD:

BLEND CASHEWS IN FOOD PROCESSOR OR BLENDER TO DESIRED TEXTURE.

ADD REMAINING INGREDIENTS AND BLEND UNTIL SMOOTH

BOIL WATER AND ADD PASTA UNTIL COOKED

STIR THROUGH PESTO INTO PASTA AND ENJOY!!!!
